I love coffee, probably a little too much, lol. My sister actually sent me a little meme on Facebook that said, “You can choose one person, for one year every coffee they drink you get $2000.” Yeah, well she picked me and I won’t lie she probably made a wise choice—I am a huge fan of coffee☕. While I don’t know how much she would make off me over a year, I can guarantee that it wouldn’t be small change 🤣.

My go-to coffee is typically warm, but OMG with these hot days lately, I must admit these Salted Caramel Coffee Popsicles were such a nice treat. Plus, just being able to wake up and grab a popsicle is so easy—and they taste freaking fabulous. Oh, and let’s not forget they are crazy easy to make, too. Seriously, you just need coffee and creamer.🙌 I am all about keeping things quick, easy, and low calorie when I can. I did the math and each one of these popsicles only have about 60ish calories, which is great for anyone counting their calories. And well, with only two ingredients does it get any easier. 😁

However, I did learn a few tricks. I’ve made plenty of coffee popsicles in the past, but this time I decided to layer them with black coffee. Naturally, black coffee freezes much harder than coffee mixed with creamer! Total learning experience: if you like strong coffee, I highly recommend layering, but definitely keep the black coffee layers thinner than the creamer layers. Otherwise, you’ll end up with what feels like eating an ice cube in the spots where the black coffee is. You’ll find more info on this below.

Easy Salted Caramel Coffee Popsicles (Only 2 Ingredient)

I hope you love this recipe, it’s easy and crazy delish such an awesome summer treat for any coffee lover. Just be sure to check the info I included about the laying process it does make a huge difference.

Ingredients

  • Black coffee (brewed and cooled)
  • Salted caramel coffee creamer

Equipment

  • Popsicle molds and sticks
  • Measuring cups or mason jars

Instructions

  • Brew & Cool: Brew 3 cups of your favorite black coffee and allow it to cool to room temperature.
  • Divide & Mix:
    • Pour 1 ½ cups of black coffee into one measuring cup/container.
    • Pour the remaining 1 ½ cups of black coffee into a second measuring cup/container, then stir in 1 ½ cups of salted caramel coffee creamer until fully combined.

  • Layering Process:
    • First Layer: Pour a thick layer of the creamer-coffee mixture into the bottom of each popsicle mold. Place in the freezer until solid (about 45–60 minutes).
    • Second Layer: Pour a thin layer of the plain black coffee over the frozen creamer layer. Return to the freezer until frozen.

  • Repeat & Freeze: Continue alternating layers until the molds are full, adding popsicle sticks before the first freeze. Freeze each layer completely before serving. I got the above mold from Amazon, and I love it. Works like a charm makes laying process easy peasy thanks to the lid that holds the popsicle sticks in place, if you have a little time on your hands highly recommend this silicone popsicle mold on Amazon.

PRO TIP: You can experiment with different layer thicknesses, but for the best texture, keep the plain black coffee layers fairly thin and position them toward the middle or bottom of the popsicle. Because unsweetened black coffee freezes hard like solid ice—whereas the creamer mixture stays nice and soft—keeping the black coffee layers thin delivers that bold coffee flavor without creating a hard, icy bite! The below image is the ones that I found to be the best as far as the layering goes.

The above image was my favorite layering consistency. With plenty of the soft, creamy coffee mixture and just enough black coffee, these were absolute perfection—I loved the sweet creamer balanced with that bold coffee bite. But you can totally customize them to your taste buds. You can leave out the black coffee layer as well, I personally like the bold coffee flavor mixed with the creamy layers. But you do you, make your taste buds dance.
