Salted Caramel Coffee Popsicles

Cool down with these homemade Salted Caramel Coffee Popsicles! Featuring alternating layers of creamy sweet coffee and bold black coffee, they are the ultimate coffee lovers sweet and refreshing summer treat.

Equipment

  • popsicle molds and sticks
  • 2 cups or mason jars

Ingredients
  

  • 3 cups black coffee brewed and cooled
  • 1 ½ cups salted caramel coffee creamer

Instructions
 

Brew & Cool:

  • Brew 3 cups of your favorite black coffee and allow it to cool to room temperature.

Divide & Mix:

  • Pour 1 ½ cups of black coffee into one measuring cup/container.
  • Pour the remaining 1 ½ cups of black coffee into a second measuring cup/container, then stir in 1 ½ cups of salted caramel coffee creamer until fully combined.

Layering Process:

  • First Layer: Pour a thick layer of the creamer-coffee mixture into the bottom of each popsicle mold. Place in the freezer until solid (about 45–60 minutes).
  • Second Layer: Pour a thin layer of the plain black coffee over the frozen creamer layer. Return to the freezer until frozen.
  • Repeat & Freeze: Continue alternating layers until the molds are full, adding popsicle sticks before the first freeze. Freeze each layer completely before serving.

Notes

PRO TIP: You can experiment with different layer thicknesses, but for the best texture, keep the plain black coffee layers fairly thin and position them toward the middle or bottom of the popsicle. Because unsweetened black coffee freezes hard like solid ice—whereas the creamer mixture stays nice and soft—keeping the black coffee layers thin delivers that bold coffee flavor without creating a hard, icy bite! The below image is the ones that I found to be the best as far as the layering goes.
