I am not finished yet; I still have a goal to drop a little bit more weight, and of course, I am always on the lookout for tasty new wrap recipes. This Avocado Tuna Salad wrap certainly falls into this category. I love the little bit of spicy kick that adding my daughter’s Sautéed Salsa Verde gives it. It’s seriously delish, and if you are not a huge fan of spice, you can leave out the hot salsa and opt for something more mild. Customize it to your taste buds!

The Ultimate Avocado Tuna Salad Wrap (High-Protein & Low Calorie Lunch)
Ingredients needed:
Tuna
Light Mayo
White Onion
Jalapeño
Hard Boiled Eggs
Avocado
Roma Tomato
Lime
Garlic Salt
Salsa Verde
Romaine Lettuce
Directions:
Start out by dicing all your veggies – onion, jalapeño as well as 2 of your hard boiled egg whites, You will also dice your tomato and 1/2 avocado if you want to top with extra avocado. Set aside, you’ll add these in just a few minutes.

In a small bowl start out by combining one hard boiled egg yolk, 1/2 of an avocado and 2 tablespoons of light mayo in a bowl and mixing together using a fork.

Once you have your avocado mayo mixture combined add in your diced eggs, onions, jalapeño, and 1 can of tuna drained well.

Add a squeeze of lime and garlic salt to taste and mix. Place on a piece of romaine lettuce and enjoy.
Why I love this recipe:
Well, what’s not to love? It’s tasty, healthy, high-protein, and low-calorie. Plus, let’s be real you can eat enough of it to actually feel full and stay full throughout the day. It’s a win-win that will send your taste buds dancing.

What if I am not a fan of spicy salsa verde:
Well you are in luck, if you are not a fan of it you can either make your own that is not spicy or you can grab some from the store without the spice. You can also skip it altogether but adding a little bit to each bite does give it a nice flavor.
Why do you use only 1 egg yolk?
Honestly, to save on the calories. I am someone who has to feel full, I couldn’t have dropped all this weight if I had to eat super small amounts that didn’t fill me up.
There are a lot of little things I have done to drop calories here and there without swapping out the taste—only adding one egg yolk to save about 60 calories. Most of the calories in an egg come from the yolk; by using two egg whites, you still have plenty of egg diced into the salad, and one yolk is still enough to give it that nice creamy flavor that goes so great in tuna.
I also do things like using light mayo rather than regular mayo and using light tuna rather than regular tuna to save one calories. Get creative and do some research; there are tons of ways you can do this without sacrificing taste while being able to eat enough to feel full.
