The Ultimate Avocado Tuna Salad Wrap

Ingredients
  

  • 1 can tuna (5 ounce can)
  • 2 tbsp light mayo
  • 1/4 cup white onion diced
  • 2 tbsp jalapeño diced
  • 1 large hard boiled egg with yolk
  • 1 large hard boiled egg white
  • 1 small avocado
  • 1/4 cup Roma tomato diced (about 1/2 tomato)
  • lime to taste
  • garlic salt to taste
  • Salsa Verde
  • romaine lettuce

Instructions
 

  • Start out by dicing all your veggies - onion, jalapeño as well as 2 of your hard boiled egg whites, You will also dice your tomato and 1/2 avocado if you want to top with extra avocado. Set aside, you'll add these in just a few minutes.
  • In a small bowl start out by combining one hard boiled egg yolk, 1/2 of an avocado and 2 tablespoons of light mayo in a bowl and mixing together using a fork.
  • Once you have your avocado mayo mixture combined add in your diced eggs, onions, jalapenos, and 1 can of tuna drained well.
  • Add a squeeze of lime and garlic salt to taste and mix. Place on a piece of romaine lettuce and enjoy.
