Ingredients

  • 6 large hard boiled eggs whites
  • 3 large hard boiled egg yolks
  • 1 medium avocado
  • 1 tbsp sour cream
  • 1/8 tsp smoked paprika
  • 1/8 tsp onion powder
  • 1/8 tsp ground cumin
  • 1/8 tsp cayenne pepper
  • 1/8 tsp black pepper
  • 1/2 tsp garlic salt
  • 1/4 tsp dried cilantro
  • 2 tbsp jalapeño finely diced
  • 2 tbsp onion finely diced
  • 4-5 grape tomatoes finely diced
  • 1/2-1 tsp fresh lime juice

Instructions

  • Cut your hard-boiled eggs in half and remove the yolks. Move the egg whites to the side for later.
  • Place three of the hard-boiled egg yolks into a medium-sized bowl with the peeled and pitted avocado. Mash and mix them together until they are well combined and reach a creamy consistency.
  • Add the seasonings and sour cream, then mix until the filling is nice, creamy, and well combined.
  • Finely dice your onion, grape tomatoes, and jalapeños. Add them to the avocado mixture and stir to combine.
  • Fill your hard boiled eggs whites using a piping bag and frosting tip; it’s easy peasy and makes them look fancy.
  • Finally, garnish with a slice of jalapeño and a dash of smoked paprika, then enjoy!
